MECHANICSVILLE, VA (WWBT) - Nat Atkins of Mechanicsville sent in his recipe for Cheese Things.
1 pound sharp Cheddar cheese
2 cups flour
1 teaspoon red pepper (half that if you're not keen on heat) salt to taste
2 sticks butter, melted & cooled
Use shredding disk of food processor to shred Cheddar cheese. Remove from work bowl and set aside.
Use the metal blade to mix the flour, red pepper, and salt. Gradually add the cheese and process until mixed, pulsing 6-8 times. With the machine running, pour the butter through the feed tube and process until the ingredients are mixed and form a ball, about 10 to 20 seconds, stopping once to scrape work bowl.
Transfer cheese mixture to a cookie press and press out in strips onto an ungreased cookie sheet. If you don't have a cookie press, form mixture into small balls and bake them that way. Or use fork to press balls into disks.
Bake at 375° for about 10 minutes, or until lightly browned. Mind them carefully so they don't burn. Makes about 100 straws, which disappear quickly. Store them in an airtight container and freeze (out of sight, out of mind) until just before serving. They're excellent with cocktails and on holidays.
