GMET Turkey Day Showdown Recipes

Aunt Donna's Asian Cole Slaw
 
Ingredients:
 
2 bags of cole slaw mix
½ cup of olive oil
½ cup of canola oil
½ cup of white vinegar
2 tablespoons of sugar
1 cup of sliced almonds
2 packets of Ramen noodles
 
Instructions:
 
1. Set oven to 400 degrees. On a foil-covered cookie sheet, toast the almonds lightly for about 4 minutes or until slightly browned. Remove almonds and set aside. Split noodle "bricks" in half, and place on cookie sheet. Repeat toasting process. Place toasted noodles in a plastic storage bag and crush noodles into small pieces.
 
2. In a large mixing bowl, add bags of cole slaw. Add oils and vinegar and toss mixture. Add almonds, noodles, and noodle seasoning. Add sugar. More may be needed to taste. Toss mixture, then serve.
 
 
 

Truffled Mashed Potatoes

Adapted from Ina Garten 2012 recipe


Ingredients:

5 pounds Yukon Gold potatoes

1 quart half and half

1 cup (2 sticks) unsalted butter

6 ounces truffle butter (white or black)

6 ounces shredded Parmesan cheese

Salt and pepper to taste

Instructions:

  1. Peel potatoes and cut into 1-inch chunks. Place in large pot of cold, salted water and bring to a boil. Lower the heat and simmer 20-25 minutes, until very tender. Drain and return to pot.
  2. Heat half and half and unsalted butter until the butter melts, then add the truffle butter off the heat.
  3. Mash the potatoes and slowly add the hot truffle cream, Parmesan cheese, salt and pepper to taste. Beat (or whip) the potatoes until they reach the consistency you like, grab a fork and enjoy!
