September 13 RESTAURANT REPORT: keeping buffet foods cold

Running a buffet and keeping foods that are sitting out at the proper temperatures can be one of the toughest challenges a restaurant faces. But a new buffet in Henrico took us inside to show us they fixed their challenges in this Restaurant Report.

Hibachi Grill and Fusion Buffet at 7801 West Broad Street in Henrico just opened a few months ago.

Said manager Raymond Xiao, "I would say we have a very good variety here. And the best part is our sushi, we have really good chef."

A health inspector found Hibachi had 4 critical violations, including that rice, sushi rolls, octopus salad, and pudding were sitting out about 10 to 20 degrees too warm. The restaurant had that and other problems fixed before a re-inspection two days later.

Explained Xiao, "We had to hire extra staff to maintain it every couple of hours, ... to maintain timing, records and stuff."

They also added a required sign at the sushi bar to reminds diners the fish is served raw.

Temperature issues were also a problem at New Catina, 6215 West Broad Street in Henrico. The inspector noted one of its four critical violations was that mayonnaise, pate, and fish sauce were not being kept cold enough. The restaurant had all problems fixed by the follow-up inspection a week later.

It was a different issue at Fu Wah Chinese Restaurant at 7451 Midlothian Turnpike, which had four critical violations. The report says bowls were being used as scoops for some dry goods, allowing the workers' hands to touch the food. All violations were corrected on the spot.

Quizno's at 1511 North Parham Road in Henrico, is not only known for its hot subs, it's known to health inspectors as extra clean. Quizno's wins the NBC 12 Hall of Fame Award for five perfect scores and for not having a critical violation in three years.
