RICHMOND, VA (WWBT) - Violations range from making sure food is fresh to storing it properly in this week's Restaurant Report.
"My chefs come in here, everything is fresh on the table, cooking here," manager James Lee showed us, walking into a chef station surrounded by chairs, at Kabuki Japanese Steak and Seafood at 11926 Iron Bridge Road in Chesterfield. "I recommend the tender steak."
After the 4-year-old restaurant had four critical violations on a state health inspection, including that raw steaks were stored over raw vegetables. Lee took our camera into the fridge to show us that raw steaks are stored on a low shelf, to make sure they can't cross contaminate any foods below.
"There's the raw meat, there's some steak in this one," said Lee.
Lee also showed us how they take the temperature of their soups and dressings to make sure they're always cold enough. "It's pretty good, its pretty good now," taking the dressing's temperature.
The restaurant corrected three violations during the inspection and earned a perfect score on a follow-up inspection two weeks later.
Also in Chesterfield, Murphy's Law Billiards at 6411 Chesterfield Meadows Drive had six critical violations. The report says several prepared foods in the make-up table should have been discarded several days earlier. A manager tells us all violations have been corrected and they've been given a clean bill of health.
We end our journey at Subway, 7999 Creighton Road in Mechanicsville, where we gave them the NBC 12 Hall of Fame Award.
"We appreciate this so much, we really do," said manager Leland Lewis.
While they're hand making sub sandwiches, they've been earning perfect scores on four out of five of their last inspections. Lewis explains how its done through.
"A lot of hard work. It's staying on top of your cleaning duties, having a regular routine and basically getting every employee involved," he said.
