March 25: Restaurant Report

RICHMOND, VA (WWBT) - A local smokehouse and a popular chain restaurant sent some critical violations up in smoke by correcting them right away. Take a look at this edition of the Restaurant Report.

"Extra Billy's is a smokehouse. We smoke everything here that we serve," said kitchen manager Bob Harr.

Extra Billy's Smokehouse and Brewery at 1110 Alverser Drive in Chesterfield puts extra time into slow smoking its barbeque favorites. Said Harr, " A lot of the customers really enjoy the pulled pork and that's what we're known for."

When Extra Billy's had 4 critical violations on a state health inspection, Harr fixed them on the spot, including making sure all food was clearly marked with consume by dates. Said Harr of the inspector pointing out some buttermilk, "As soon as he pointed it out to me, I labeled it. I had just opened it the previous day. I fixed as much stuff as I could right on site."

After discovering the stove was causing an old refrigerator's temperature to run too high, he bought a new refrigerator and moved it away from the stove. "We went in and purchased a brand new unit. As you can see we're right in the green," pointing to the temperature gauge, "right where we should be."

And Harr made sure all chemical cleaners are clearly marked. All violations were corrected on the spot. The restaurant had a perfect score on its previous inspection. Harr showed us inspection reports taped to a kitchen wall. "These are all reports that we've done. The health man has come by and I save all the old ones, so I can constantly check and try to make it better," said Harr.

In Henrico, Ruby Tuesday at 5310 West Broad Street had 4 critical violations. The inspector wrote that wait staff separated soiled dishes then returned to the dining room without washing their hands. Violations were corrected during the inspection. The restaurant earned a perfect score on a follow-up inspection.

Ruby Tuesday, Inc. sent us a statement saying, "Ruby Tuesday takes matters of this nature very seriously and moved immediately to correct the violations that were cited. Ruby Tuesday cooperated fully with the health department and can confirm that no violations were found during the follow-up visit."

Big John Grill at 2001 Venable Street in Richmond has won this week's NBC 12 Hall of Fame Award. Said owner Big John Pettaway, "I've been open 15 years and specialize mostly in chicken wings."

Big John Grill has earned a big four perfect scores on its health inspections. Explains Big John, "Well, I just keep a nice clean place. A lot of work in it, but I like cleanliness myself. So I keep it clean."
